  2011 02 10 031.JPG - We took an audio guide tour of the distillery and learnt all about the process.  The Depaz estate pride themselves in being fairly self sustaining.   Not only does the sugar cane they harvest produce the rum, the pulp after crushing is used to fire the furnace to run the steam engine which powers the plant.  Even the smoke from the furnace is put through a special process to remove the ash, which is collected and used as fertiliser for the cane fields.
